WHITE CHOCOLATE CRACKLES
IF YOU FOLLOW ME ON INSTAGRAM, YOU'LL ALREADY KNOW THAT LAST SUNDAY MISSY TURNED THREE.
And you'll also know that, true to form, I left everything to the last minute.
I mean, I did everything on the Saturday - the shopping, the cake, the works.
And as we were having the party up at my Dad's holiday house in the King Valley, it had to be all ready to pack in the car early on Sunday morning.
Talk about squeezing every minute out of that Saturday!
But it was all worth it :) The weather played nice, so we were all able to sit outside with Dad's little potbelly keeping everyone warm, and the kids had a ball playing with balloons and party poppers.
Missy got to ride her new scooter to her heart's content, had her favorite Spaghetti Bolognese for lunch, and loved the Sprinkles theme. It was a lovely, relaxed day, and I think everyone had a great time.
So, over the next few days, I'll be sharing with you my last minute party food - it's all easy and quick to make, and travels well.
This will be a six part series, and first up, we have some classic Chocolate Crackles!
WHITE CHOCOLATE CRACKLES:
STEP ONE: You'll need 200g butter, 200g white chocolate, 6 - 8 cups rice bubbles, sprinkles, and a mini muffin tin and cases.
STEP TWO: Melt the chocolate and butter together over low heat, stirring until smooth. Add rice bubbles, a few cups at a time, stirring to combine. You want the final mixture to clump together, and be coated with plenty of chocolate mixture - so adjust the amount of rice bubbles to suit your mixture.
STEP THREE: Place heaped teaspoonfuls into the mini muffin cases, and top with sprinkles. Refrigerate for a few hours until set hard, and they're ready to serve.
How easy was that! I was so pleased with the result - pretty and dainty - just right for a little girl's party :)
