STRAWBERRY & MINT MILLE-FEUILLES
THIS SUMMER WE HAVE HAD THE MOST AMAZING STRAWBERRIES AVAILABLE!
Even the supermarkets have been selling the most luscious, scented berries and they're perfectly ripe and super cheap!
Missy has even taken to them (she's ridiculously fussy at the moment), so I've been buying punnets and punnets to make the most of it.
Anyway, it's been a little while since I did some of my Easy Meal Ideas, so this week I've put together five lovely strawberry desserts... and the first one is... Mint & Strawberry Mille-Feuilles.
Really impressive but super simple to make, the mint cream gives them a gorgeous lightness and zest! Best served immediately so the pastry stays lovely and crisp.
TO MAKE:
Just cut some bought puff pastry into rectangles, bake until golden and allow to cool. Whip some cream, sweeten to taste with icing sugar and add some finely chopped fresh mint leaves.
Top half the pastry rectangles with sliced strawberries and a thick layer of cream, then sandwich together with the remaining pastry. Dust with icing sugar and serve immediately.
